ETIENNE’S APPLE, SMOKED GOUDA AND MAPLE-ROSEMARY BACON PIZZA

The pineapple pizza can come eat it’s own heart out. Made by our little cousin who likes to hide, this pizza decorated with apple slices is without a doubt the best.

Ingredients

  • 1 recipe for homemade pizza dough

  • ½ package (375 g) maple bacon

  • Olive oil

  • Garlic salt

  • ½ vidalia onion, halved and thinly sliced

  • 500 ml (2 cups) grated mozzarella cheese

  • 2 medium Ambrosia apples (or other hard apple), thinly sliced

  • 250 ml (1 cup) smoked gouda cheese, grated

  • 1 sprig of fresh rosemary

Preparation

  • Preheat the oven to 220°C (425°F).

  • Place the bacon slices on a large baking tray, then place in the oven and cook for about 10 minutes or until just crisp.

  • Place the bacon slices on absorbent paper and pat them dry to remove excess fat.

  • Roughly chop the bacon and set aside.

  • Adjust oven temperature to 260°C (500°F).

  • Spread the dough into two medium disks and place them on a well-greased baking sheet or baking rack.

  • Pour a thin drizzle of olive oil all over the surface (including the crust) and sprinkle with garlic salt to taste.

  • Spread the mozzarella, bacon, onions and apples over the dough and finish with the gouda cheese.

  • Lay the fresh rosemary on top.

  • Bake for about 15 to 20 minutes (if you have a pizza oven, preheat to 260°C (500°F) and bake for 8 to 12 minutes or until the cheese is golden brown).
