ELENA’S CHICKEN AND APPLE PORK FILET

Pork filet

Ingredients

  • 1 large fresh pork tenderloin

  • 2 or 3 boneless chicken breasts

  • 375 g bacon (50% less salt)

  • 1 large apple (Cortland, Spartan or Empire)

  • 75 ml (⅓ cup) maple syrup

  • 2.5 ml (½ tsp) parsley

  • 1 ml (¼ tsp) oregano

  • Salt and pepper (to taste)

Preparation

  • Preheat the oven to 160°C (325°F).

  • Cut the pork tenderloin and chicken breasts into medallions about 2 cm thick.

  • Cut the apple in half, remove the core and cut into half-centimeter slices.

  • In a baking dish, assemble the pieces of apple, chicken and pork in a line (packed skewer style), inserting a serpentine slice of bacon between the pieces.

  • Drizzle everything with maple syrup, add a little water or broth to simmer and sprinkle with the spices.

  • Bake for approximately 2 hours 30 minutes.
