Elena, our accountant, is good with numbers and with pots and pans. Here is one of her easy-to-prepare recipes, perfect for gourmet moments with family or friends.
1 large fresh pork tenderloin
2 or 3 boneless chicken breasts
375 g bacon (50% less salt)
1 large apple (Cortland, Spartan or Empire)
75 ml (⅓ cup) maple syrup
2.5 ml (½ tsp) parsley
1 ml (¼ tsp) oregano
Salt and pepper (to taste)
Preheat the oven to 160°C (325°F).
Cut the pork tenderloin and chicken breasts into medallions about 2 cm thick.
Cut the apple in half, remove the core and cut into half-centimeter slices.
In a baking dish, assemble the pieces of apple, chicken and pork in a line (packed skewer style), inserting a serpentine slice of bacon between the pieces.
Drizzle everything with maple syrup, add a little water or broth to simmer and sprinkle with the spices.
Bake for approximately 2 hours 30 minutes.
