Our cousin's recipe always sparks a lively discussion, where everyone expresses their opinion on the perfect size of a square. Some family members have a sweeter tooth than others (we won't give names).
375 ml (1 ½ cups) flour
60 ml (¼ cup) brown sugar
125 ml (½ cup) butter
375 ml (1 ½ cups) brown sugar
375 ml (1 ½ cups) H77 maple syrup
3 eggs
45 ml (3 tbsp.) flour
1 ml (¼ teaspoon) salt
5 ml (1 tsp) vanilla
In a bowl, mix the flour, brown sugar and butter until you obtain a grainy texture.
Grease an 8-inch square pan.
Press the mixture into the bottom of the mold and bake at 180°C (350°F) for 10 to 15 minutes.
In a saucepan, bring the brown sugar and syrup to a boil.
Beat eggs in a large bowl.
Pour the brown sugar and syrup mixture over the beaten eggs, stirring constantly.
Add the flour, salt and vanilla to the egg mixture and mix well.
Pour this mixture onto the crust and bake at 180°C (350°F) for 20 to 25 minutes.
