APPLE SQUARES

Anaïs’ recipe

Our niece Anaïs, Benoît's daughter, makes the best recipe for apple squares. These little sweet delights are always the first to disappear during our family celebrations.

Crust

Ingredients

  • 125 ml (½ cup) softened semi-salted butter

  • 125 ml (½ cup) lightly packed brown sugar

  • 375 ml (1½ cup) unbleached all-purpose flour

Preparation

  • Place a rack in the center of the oven and preheat to 180°C (350°F).

  • Butter and line the bottom of a square mold with parchment paper.

  • Cream the butter with the brown sugar in a bowl.

  • Incorporate the flour until you obtain a lumpy texture.

  • Reserve 125 ml (½ cup) of the mixture for garnish.

  • Press the remaining mixture into the bottom of the mold.

  • Bake for 10 minutes.

Filling

Ingredients

  • 125 ml (½ cup) quick-cooking oatmeal

  • 30 ml (2 tbsp.) softened semi-salted butter

  • 60 ml (¼ cup) lightly packed brown sugar

  • 30 ml (2 tbsp.) cornstarch

  • 1 ml (¼ tsp) ground cinnamon

  • 1 liter (4 cups) peeled Spartan apples

Preparation

  • Stir the oats and butter into the reserved mixture, then set aside.

  • In a large bowl, mix the flour with the cornstarch and cinnamon.

  • Add the apples and coat them well.

  • Spread over the crust, then sprinkle with the oat mixture.

  • Bake for 45 minutes or until topping is lightly browned.

  • Leave to cool on a rack before unmolding.

  • When serving, add a drizzle of maple syrup.
