MONIA’S APPLE & ONION SOUP

As an entrée or a side dish, the salad from our neighbor and founder of Au coeur de la pomme is simply incredible. The secret? Its apple vinaigrette featuring its 15-year-old cider vinegar.
125 ml (½ cup) pecans or walnuts
1.5 liters (6 cups) arugula and Butterhead lettuce or other salad mix
1 or 2 Honeycrisp apples (or Ambrosia or another variety of apples), thinly sliced
Pour the vinaigrette over the lettuce.
Add the pecans or walnuts.
Mix and enjoy.
75 ml (⅓ cup) olive oil
60 ml (¼ cup) apple cider vinegar 15 years old or apple balsamic type
15 ml (1 tbsp) herb mustard Apple core
15 ml (1 tbsp) apple butter (optional)
10 ml (2 tsp) honey
15 ml (1 tbsp) fresh thyme or 5 ml (1 tsp) dried thyme
10 ml (2 tsp) fresh sage or 2.5 ml (½ tsp) dried sage
Salt and pepper to taste
