THE APPLE CAKE

Alain Bergeron, our quality control Director, aka Quality Alain, is a quiet force of nature, and we can always count on him to be the calm after the storm regardless of the storm. And sometimes, while he waits, he creates cocktails like this one.
45 ml (1 ½ oz) Comont gin
60 ml (2 oz) fresh lemon juice
15 ml (1/2 oz) pine, fir or rosemary syrup*
1 can of Heritage 77 sparkling red fruit juice
Pine, fir or rosemary branch
Pour the gin, lemon juice and syrup in a Shaker.
Add ice cubes and shake vigorously
Filter through a fine strainer and pour into a cooled glass
Top with sparkling juice and stir with a spoon
Garnish with pine, fir or rosemary branch
*To make a good syrup; heat sugar, water and an Aromatic plant (2:2:1 ratio) until you get a syrupy texture
